Ingredients

Scale

Base

  • 3540 saltine crackers

Toffee Layer

  • 1 cup unsalted butter
  • 1 cup packed brown sugar

Topping

  • 2 cups light green candy melts (about 1 12-ounce bag)
  • Red heart sprinkles, for garnish
  • Green sprinkles of choice, for garnish

Instructions

  1. Prepare: Preheat your oven to 400 degrees Fahrenheit. Line a 10 x 15-inch baking sheet with aluminum foil and spray it with nonstick cooking spray to prevent sticking.
  2. Arrange Crackers: Lay out 35-40 saltine crackers in even rows to completely fill the bottom of the prepared baking pan. Set aside while you prepare the toffee.
  3. Boil Toffee: In a medium saucepan over medium-high heat, melt 1 cup unsalted butter with 1 cup packed brown sugar. Stir until the sugar dissolves completely. Allow the mixture to come to a boil, continuing to boil for 2-3 minutes, or until it reaches 270-290 degrees Fahrenheit on a candy thermometer.
  4. Bake Toffee on Crackers: Pour the hot toffee mixture evenly over the saltine crackers in the baking sheet. Use a heat-safe spatula to spread it evenly to cover all crackers. Place the pan in the oven and bake for 5 minutes to set the toffee.
  5. Melt Candy Coating: Remove the pan from the oven and immediately sprinkle the 2 cups of light green candy melts evenly over the hot toffee layer. Let the pan sit for 2-3 minutes to allow the candy melts to soften and melt.
  6. Finish and Decorate: Using a spatula, spread the melted candy evenly over the toffee-coated crackers. While still melted, sprinkle red heart sprinkles and green sprinkles over the top for a festive look. Allow the candy to cool completely and harden before breaking into pieces and serving.

Notes

  • Use a candy thermometer to ensure the toffee reaches the correct temperature for the perfect texture.
  • For easy cleanup, line the baking sheet with aluminum foil and spray with nonstick spray before adding crackers.
  • Use good quality candy melts to achieve a smooth and vibrant coating.
  • Store in an airtight container to keep crisp and fresh.
  • Can be customized with different colored candy melts and sprinkles for other holidays or themes.
