For Ground Beef:

  • 1 lb lean ground beef (93% preferred)
  • 1 yellow onion, diced
  • 1 tbsp olive oil
  • 1 taco seasoning packet (or 2 tbsp homemade)
  • Salt and pepper to taste

For Assembly:

  • 1 avocado, sliced
  • 1 cup cottage cheese (low-fat or full-fat)
  • 2 tbsp hot honey (store-bought or homemade)

Instructions

  1. Prep and Roast Sweet Potatoes – Preheat oven to 400°F. Toss sweet potatoes with olive oil, paprika, garlic powder, cinnamon, salt, and pepper. Roast for 40–45 minutes, stirring halfway.
  2. Cook Ground Beef – In a skillet, cook onion in olive oil until softened. Add ground beef, season with taco mix, and cook until browned.
  3. Assemble Bowls – In each bowl, layer roasted sweet potatoes, ground beef, sliced avocado, and cottage cheese.
  4. Add Hot Honey – Drizzle hot honey over the top and garnish with cilantro, red pepper flakes, or lime wedge.

Notes

  • You can customize the toppings based on your preferences, such as adding salsa or jalapeños for extra flavor.
