Base
- 1 12 oz. box Rice Chex cereal (yields 12 cups)
Chocolate Coating
- 6 Tbsp. unsalted butter
- 1 1/2 cups semisweet chocolate chips (gluten free)
- 3/4 cup creamy peanut butter (gluten free)
- 1 tsp. vanilla extract
Coating & Topping
- 1 1/4 – 1 1/2 cups powdered sugar (adjust to taste)
- 1/4 tsp. kosher salt
- 1 cup Reese’s Pieces candies
- Prepare Cereal: Pour the entire 12 oz. box of Rice Chex cereal, which yields approximately 12 cups, into a large serving bowl. This will be the base for the snack mix.
- Melt Butter: Using a double boiler, heat a few cups of water to a low boil. Place the top part of the double boiler over the boiling water and melt 6 tablespoons of unsalted butter completely.
- Melt Chocolate and Peanut Butter: To the melted butter, add 1 1/2 cups gluten-free semisweet chocolate chips and 3/4 cup gluten-free creamy peanut butter. Stir continuously with a wooden spoon or spatula until the mixture is smooth and fully combined. Alternatively, you can melt these ingredients together in the microwave in short bursts, stirring frequently.
- Add Vanilla: Stir in 1 teaspoon of vanilla extract into the warm chocolate and peanut butter mixture until fully incorporated.
- Coat Cereal: Slowly drizzle the warm chocolate mixture over the Rice Chex cereal a little at a time, gently stirring occasionally with a wooden spoon to ensure even coating. Be careful as the cereal is delicate and can break easily.
- Divide and Sugar Coat: Once coated, divide the cereal into two equal portions and place each into separate heavy-duty Ziploc bags. Add 1/2 cup powdered sugar to each bag, seal tightly, and shake vigorously until the cereal is evenly coated with sugar.
- Final Toss: Pour both bags of coated cereal onto one or two baking sheets. Sprinkle an additional 1/4 to 1/2 cup powdered sugar, depending on your sweetness preference, over the top. Add 1/4 teaspoon kosher salt and carefully toss the mixture with a wooden spoon to evenly distribute the sugar and salt.
- Add Candy: Transfer half of the Puppy Chow to a large serving bowl and mix in 1/2 cup Reese’s Pieces candies. Repeat the process with the remaining half of the cereal and the other 1/2 cup of candies.
