Perfect for a cozy meal, this soup combines tender potatoes, carrots, celery, and corn with robust Italian seasoning and fresh parsley for a satisfying taste experience.

Ingredients

Scale

Main Ingredients

  • 1 lb ground beef
  • 2 cups diced potatoes
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 1 can diced tomatoes (14.5 oz)
  • 1 cup corn kernels

Liquids and Seasonings

  • 4 cups beef broth
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Brown the ground beef: In a large pot, cook the ground beef over medium heat until fully browned. Drain any excess fat to keep the soup from being greasy.
  2. Sauté the vegetables: Add the chopped onion, minced garlic, chopped carrots, and celery to the pot. Sauté for about 5 minutes until the vegetables start to soften and become fragrant.
  3. Add tomatoes, potatoes, corn, seasonings, and broth: Stir in the canned diced tomatoes, diced potatoes, corn kernels, Italian seasoning, salt, and pepper. Pour in the beef broth and mix everything together thoroughly.
  4. Simmer the soup: Bring the mixture to a boil, then reduce the heat to let it simmer gently. Cook uncovered for 25 to 30 minutes until the potatoes and other vegetables are tender.
  5. Check tenderness and seasoning: Taste the soup and ensure potatoes are fully cooked. Adjust salt and pepper as needed for flavor balance.
  6. Garnish and serve: Remove from heat and sprinkle fresh chopped parsley on top before serving to add a fresh herbal note.

Notes

  • For a thicker soup, mash some potatoes against the side of the pot while cooking.
  • Use low-sodium beef broth if you want to control the salt content.
  • You can substitute ground turkey or chicken for a lighter option.
  • Leftover soup stores well in the refrigerator for up to 3 days and freezes nicely for up to 2 months.
  • Add other vegetables like green beans or peas based on preference.
