  • 8 large soft medjool dates
  • 1/2 cup creamy peanut butter
  • 2 Tablespoons pure maple syrup (optional)
  • 1/4 cup crushed pretzels

Coating:

  • 20 whole pretzels
  • 1 cup dark chocolate chips
  • 1 1/2 Tablespoons coconut oil

Instructions

  1. Prepare Date Filling: If dates are not soft, soak in water for 10 minutes, then drain. Add dates, peanut butter, and maple syrup to a food processor. Blend until a gooey filling forms. Fold in crushed pretzels.
  2. Assemble Bars: Lay out whole pretzels and top each with a tablespoon of filling, shaping it into a bar. Freeze for 10-15 minutes.
  3. Coat in Chocolate: Melt chocolate and coconut oil. Dip each bar to coat, place on parchment paper, and drizzle with additional chocolate if desired.
