  • ½ cup unsweetened applesauce
  • 1 ¼ cups milk (whole milk is best)
  • 2 tablespoons honey (or pure maple syrup)
  • 1 teaspoon vanilla extract

Instructions

  1. Melt the butter: Melt the butter and set it aside to cool slightly.
  2. Prepare dry ingredients: In a large bowl, whisk together the white whole wheat flour, baking powder, baking soda, and salt.
  3. Mix wet ingredients: In a medium bowl, combine the eggs, applesauce, milk, honey, and vanilla. Whisk until smooth. Whisk in the melted butter.
  4. Combine wet and dry: Pour the wet ingredients into the dry and whisk until just incorporated. Do not over-mix; some lumps are okay. The batter should be thick.
