Ingredients

Scale

Cottage Cheese Taco Bases

  • 3 tablespoons low-fat cottage cheese (about 200g)
  • 1 egg white
  • Salt, to taste
  • Black pepper, to taste
  • Oregano, to taste
  • Chili flakes, to taste

Toppings

  • 2 fried eggs
  • 2 tablespoons pesto
  • Handful of rocket (arugula)
  • Chopped chives, to taste
  • 2 teaspoons Sriracha sauce
  • 1 avocado, sliced or mashed

Instructions

  1. Preheat the Oven or Air Fryer: Set your oven or air fryer to 400°F (about 200°C) to get it ready for baking the taco bases.
  2. Mix Cottage Cheese and Egg White: In a bowl, whisk together the low-fat cottage cheese and egg white with a fork until the mixture is smooth and well combined.
  3. Form Taco Bases: Line a baking sheet with parchment paper. Spoon the cottage cheese mixture into two equal circles on the sheet, spreading them out to form small taco bases. Season with salt, black pepper, oregano, and chili flakes.
  4. Bake the Bases: Place the baking sheet in the oven or air fryer and bake for 20-35 minutes. Halfway through baking, carefully dab any excess liquid with a paper towel and use a spatula to reshape the bases if needed. The bases should be crispy and golden when done.
  5. Cool the Taco Bases: Remove the taco bases from the oven and allow them to cool for about 10 minutes to firm up further.
  6. Prepare the Toppings: While the bases are cooling, cook the eggs to your preferred doneness (fried in this recipe). Chop the chives and slice or mash the avocado.
  7. Assemble the Tacos: Spread a tablespoon of pesto over each cooled taco base. Top with a fried egg, a handful of rocket, chopped chives, sliced or mashed avocado, and finish with a drizzle of sriracha for a spicy kick.
  8. Serve Immediately: Enjoy your high-protein cottage cheese breakfast tacos fresh for the best flavor and texture.

Notes

  • The baking time can vary depending on your oven or air fryer model, so keep an eye on the taco bases to avoid burning.
  • To make cooking faster, you can prepare the toppings while the taco bases bake.
  • If you prefer a milder flavor, adjust or omit the chili flakes and sriracha.
  • For extra protein, you can add another egg white to the taco base mix.
  • These tacos are best eaten fresh but can be refrigerated for up to a day; reheat gently to avoid drying out.
