Instructions

  1. Prepare Cheese: Finely shred the sharp cheddar cheese using a cheese grater and transfer it to a food processor. Pulse until the cheese becomes very finely chopped to ensure it will incorporate well into the dough.
  2. Combine Dry Ingredients: Add flour, kosher salt, sugar, baking powder, paprika, celery salt, and onion powder into the food processor with the cheese. Pulse until all ingredients are evenly mixed.
  3. Add Butter and Water: Incorporate the chilled unsalted butter and 4 tablespoons of cold water into the mixture. Pulse a few more times until the dough starts to form. If the dough is crumbly, add additional cold water 1 tablespoon at a time until it sticks together.
  4. Knead and Chill Dough: Transfer the dough to a floured work surface and knead it lightly to bring it together. Divide into two discs approximately 1 inch thick. Cover with plastic wrap and refrigerate for 30 minutes to 1 hour.
  5. Preheat Oven and Prepare Baking Sheets: Preheat your oven to 350˚F (175˚C). Line two large baking sheets with parchment paper to prevent sticking.
  6. Roll and Cut Shapes: On a lightly floured surface, roll each chilled dough disc into a rectangle about 9-10 inches by 11 inches, maintaining a thickness of roughly 1/8 inch. Use a goldfish-shaped cookie cutter to cut out crackers. Arrange the cutouts on the prepared baking sheets and sprinkle lightly with salt to taste. Gather and re-roll any scraps to use all dough.
  7. Bake the Crackers: Bake the crackers in the preheated oven for 14 to 16 minutes until the bottoms turn slightly golden brown. This indicates they are crisp and baked through.
