Filling
- 2 cups ground walnuts, toasted
- 1/4 cup sugar
- 2 teaspoons ground cinnamon
Phyllo Dough & Butter
- 12 sheets frozen phyllo dough, thawed
- 1/2 cup butter, melted
Syrup
- 1/2 cup honey
- 1/2 cup sugar
- 1/2 cup water
- 1 tablespoon lemon juice
- Preheat and prepare filling: Preheat your oven to 350°F (175°C). In a bowl, combine the toasted ground walnuts, sugar, and ground cinnamon to create the flavorful filling mixture.
- Assemble the roll-ups: Lay one sheet of thawed phyllo dough on a 15×12-inch piece of waxed paper and brush generously with melted butter. Place a second phyllo sheet on top, brushing it with butter as well. Keep the remaining phyllo sheets covered with a damp towel to prevent drying. Evenly sprinkle 1/4 cup of the walnut mixture over the layered phyllo. Using the waxed paper to help roll, tightly roll the layered dough jelly-roll style starting from the long side, peeling away the paper as you roll. Slice this roll into 4 smaller rolls and transfer them to a greased 13×9-inch baking dish. Repeat this process with the remaining phyllo and walnut mixture, using 1/4 cup portions each time until all dough and filling are used.
- Bake the roll-ups: Place the baking dish in the preheated oven and bake the rolls for 14 to 16 minutes, or until they are light golden brown and crispy. After baking, remove the dish and cool on a wire rack.
- Make the syrup: While the rolls bake, combine the honey, sugar, water, and lemon juice in a small saucepan. Bring this mixture to a boil over medium heat, then reduce the heat and simmer for 5 minutes. Remove from heat and allow the syrup to cool for 10 minutes.
- Finish and serve: Drizzle the cooled syrup evenly over the baked cinnamon roll-ups. For added texture and flavor, sprinkle the remaining walnut mixture over the top. Serve warm or at room temperature for a deliciously sweet treat.
Notes
- Handle phyllo dough gently and keep covered with a damp towel to prevent it from drying and tearing.
- Toasting the walnuts enhances their flavor and gives the roll-ups a deeper nutty taste.
- The syrup adds moisture and sweetness but avoid soaking the rolls to keep them crispy.
- These roll-ups can be served warm or at room temperature and make great finger food for parties and gatherings.
- Store leftovers in an airtight container at room temperature for up to 2 days; reheat briefly to restore crispness.
