Instructions

  1. Season and sear the chicken: Season cubed chicken breast pieces with salt and pepper. Heat olive oil in a skillet over medium-high heat. Add the chicken and sear until browned on all sides, about 5-7 minutes.
  2. Prepare the honey lime glaze: In a bowl, whisk together honey, lime zest, lime juice, soy sauce, minced garlic, and optional chili flakes. Pour this mixture over the seared chicken in the skillet.
  3. Simmer the chicken and glaze: Let the sauce simmer in the skillet, stirring frequently, until it bubbles and thickens. Ensure the chicken is fully cooked and beautifully glazed, about 3-5 more minutes. Remove from heat once done.
  4. Prepare the rice and avocado layers: Mix the cooked jasmine rice with 1 tbsp fresh lime juice, chopped cilantro, and a pinch of salt. In a separate bowl, gently toss the diced avocado with remaining 1 tbsp lime juice, salt, and pepper to taste.
  5. Assemble the stacks: Using a ring mold, press the seasoned rice firmly at the bottom. Add a layer of the lime-seasoned diced avocado. Optionally, add another thin layer of rice if desired. Finally, top with the honey lime glazed chicken pieces.
