  • 1 tbsp fresh oregano (or 1 tsp dry oregano)

Instructions

  1. Heat olive oil: In a large skillet, heat 2 tablespoons of olive oil over medium heat to prepare for sautéing the turkey and aromatics.
  2. Sauté turkey and aromatics: Add ground turkey, salt, pepper, chopped onion, and minced garlic to the skillet. Cook until the turkey is browned and the onions are translucent.
  3. Transfer turkey mixture: Move the browned turkey mixture from the skillet to a Dutch oven or large pot.
  4. Sauté vegetables: In the same skillet, add sliced carrots and celery. Sauté just until they become slightly tender, being careful not to overcook.
  5. Transfer vegetables: Add the sautéed carrots and celery to the Dutch oven with the turkey.
  6. Deglaze skillet: Pour the can of diced tomatoes into the skillet to deglaze it, scraping up the browned bits for extra flavor.
  7. Add broth and herbs: To the skillet with tomatoes, add beef broth, tomato paste, fresh or dried basil, oregano, thyme, and chili pepper flakes. Bring the mixture to a boil.
  8. Combine ingredients: Pour the broth and herb mixture into the Dutch oven. Stir all ingredients together thoroughly.
  9. Simmer the soup: Reduce heat to low and let the soup simmer for 30 to 40 minutes, allowing flavors to meld.
  10. Add parsley and finish cooking: Stir in fresh parsley during the last 5 to 10 minutes of cooking to preserve its bright flavor.
