- Drain and dry cauliflower: Drain the steamed cauliflower and pat dry with a paper towel. Set aside.
- Season the chicken: Cut the chicken breast into 1-inch cubes, then sprinkle with onion powder, garlic powder, salt, and pepper evenly.
- Cook the chicken: Heat olive oil in a skillet over medium-high heat. Add the cubed chicken and cook for approximately 10 minutes or until cooked through. Remove from heat and set aside.
- Preheat the oven: Preheat the oven to 350°F (175°C).
- Heat Alfredo sauce: In a small pot over medium-low heat, warm the keto Alfredo sauce. Once hot, add 3 ounces of shredded mozzarella cheese and stir until melted and smooth.
- Prepare the casserole dish: Spray a 13×9 inch casserole dish with non-stick spray. Spread ½ cup of keto Alfredo sauce evenly on the bottom.
- Layer cauliflower and chicken: Add half of the steamed cauliflower in a layer, then top with half of the cooked chicken, making sure it fills the spaces between the cauliflower.

- Repeat layers: Repeat with the remaining cauliflower and chicken to form another layer. Pour the remaining keto Alfredo sauce over, and top with the last of the mozzarella cheese.
- Bake the casserole: Place the casserole in the preheated oven and bake for 30 minutes or until warmed through and cheese is fully melted and bubbly.
