Crust Ingredients
- 2½ cups (250 g) almond flour
- ⅓ cup (40 g) coconut flour
- ⅓ cup (75 g) butter, melted
- 2 large eggs
- ½ teaspoon salt
- 1 teaspoon baking powder
- 2 tablespoons apple cider vinegar (optional, for texture)
Filling Ingredients
- 1 lb (450 g) ground meat (beef, turkey, or chicken)
- 1 small onion, finely diced (about ½ cup)
- 2 cloves garlic, minced
- 1 tablespoon olive oil or butter (for cooking)
- ¾ teaspoon salt (adjust to taste)
- ½ teaspoon black pepper
- ½ teaspoon paprika
- ½ teaspoon dried thyme or oregano
- ¼ teaspoon chili flakes (optional)
- Prepare the dough: In a large mixing bowl, combine almond flour, coconut flour, salt, and baking powder. Add the melted butter and eggs, mixing until a soft, cohesive dough forms. If the dough feels sticky or too soft, cover and refrigerate for 10–15 minutes to allow the coconut flour to absorb moisture and make it easier to handle.
- Cook the meat filling: Heat a skillet over medium heat and add oil or butter. Cook the diced onion until soft and translucent, about 3–4 minutes. Add minced garlic and cook for 20–30 seconds until fragrant. Add ground meat and season with salt, pepper, paprika, dried herbs, and optional chili flakes. Cook until meat is browned and no longer pink. Remove from heat and let cool slightly.
- Roll out the dough: Divide the dough into equal portions. Place each between two sheets of parchment paper and roll out into circles about ⅛ inch thick. Rustic edges are fine and will bake beautifully.
- Assemble the pies: Spoon a portion of the cooled meat filling onto the center of each dough circle, leaving a border around the edges. Avoid overfilling to prevent splitting.
- Seal the pies: Fold the dough over the filling or place a second dough circle on top to form a pie. Press edges firmly with fingers or a fork to seal completely. Optionally, brush tops with beaten egg for a glossy, golden finish.
- Bake: Arrange the pies on a parchment-lined baking sheet. Bake in a preheated oven at 375°F (190°C) for 22–25 minutes, until crust is firm and lightly golden.
- Cool and serve: Remove pies from oven and let cool for 5–10 minutes before serving to allow filling to set and improve texture.
Notes
- Resting the dough in the refrigerator improves handleability and texture due to coconut flour’s moisture absorption.
- Using apple cider vinegar in the dough is optional but can help improve crust texture.
- Ensure the meat filling is cooled before assembling to prevent dough softening and splitting.
- Adjust seasonings in the filling according to taste preferences.
- These pies can be made with any type of ground meat such as beef, turkey, or chicken.
