Dry Ingredients:
- 2½ cups (300 g) all-purpose flour
- 1 tsp cornstarch
- 1 tsp baking powder
- ¼ tsp baking soda
- ½ tsp salt
Wet Ingredients:
- 1½ cups (300 g) granulated sugar
- 3 small or medium lemons, zested
- 1 cup (226 g) unsalted butter, melted
- 1 large egg (US), room temperature
- 1 large egg yolk (US), room temperature
- 1 tsp (5 ml) vanilla extract
- 1 cup (105 g) fresh blueberries
- ¼ cup (50 g) granulated sugar for rolling (optional)
- Preheat the Oven: Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Melt Butter: Melt the butter and let it cool in the fridge for 10 minutes.
- Prepare Dry Ingredients: In a bowl, whisk together flour, cornstarch, baking powder, baking soda, and salt.
- Mix Wet Ingredients: In a large bowl, combine sugar and lemon zest. Add melted butter, eggs, and vanilla extract. Mix well.
- Combine Ingredients: Gently fold in the dry ingredients. Add blueberries and mix.
- Scoop Dough: Scoop dough into balls and roll in sugar. Place on baking sheet.
