Frosting:

  • 1/2 cup unsalted butter (room temperature)
  • 4 ounces cream cheese (room temperature)
  • 4 cups confectioner’s sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon zest
  • 2 teaspoons lemon juice

Instructions

  1. Lemon Cupcakes: Preheat oven to 350℉. Line a cupcake pan with liners. Whisk dry ingredients together. Cream butter and sugar, add eggs, vanilla, and lemon zest. Combine milk and lemon juice. Alternate adding dry ingredients and milk mixture to butter mixture. Bake for 17-19 minutes.
  2. Frosting: Beat butter and cream cheese until creamy. Gradually add confectioner’s sugar, then whip until fluffy. Mix in vanilla, lemon juice, and zest. Frost cupcakes and serve.
