This Loaded Cauliflower Casserole is a delicious low-carb alternative to loaded baked potatoes. Creamy, cheesy, and topped with crispy bacon, it’s a satisfying side dish or main course for any meal.

Cauliflower:

  • 2 lbs cauliflower florets (cut into bite-sized pieces)

Cheese Mixture:

  • 1 (8 oz) package cream cheese (softened)
  • 1/2 cup sour cream
  • 1 1/2 cups sharp cheddar cheese (finely shredded)
  • 1 1/2 cups Monterey Jack cheese (finely shredded)
  • 1 tsp garlic powder
  • 1/2 tsp onion powder

Additional Ingredients:

  • 6 slices crispy cooked bacon (coarsely chopped)
  • 1/4 cup chopped fresh chives (reserve 1 tbsp for topping)
  • Kosher salt and black pepper to taste

Instructions

  1. Steam the Cauliflower: Steam the cauliflower florets until fork-tender, about 10 minutes. Drain well in a colander.
  2. Preheat the Oven: Preheat the oven to 425°F. Grease a 9×13-inch baking dish.
  3. Prepare Cheese Mixture: In a large mixing bowl, combine the softened cream cheese, sour cream, sharp cheddar cheese, Monterey Jack cheese, garlic powder, and onion powder. Mix until smooth and creamy.
  4. Combine Ingredients: Gently fold in the steamed cauliflower, half of the chopped bacon, and chopped chives. Season with kosher salt and black pepper to taste.
  5. Assemble Casserole: Spoon the mixture into the prepared casserole dish. Top with the remaining bacon.
  6. Bake: Bake uncovered for 20-25 minutes or until the cheese is melted and bubbly.
  7. Garnish and Serve: Garnish with the reserved chives before serving.
