Cauliflower:
- 2 lbs cauliflower florets (cut into bite-sized pieces)
Cheese Mixture:
- 1 (8 oz) package cream cheese (softened)
- 1/2 cup sour cream
- 1 1/2 cups sharp cheddar cheese (finely shredded)
- 1 1/2 cups Monterey Jack cheese (finely shredded)
- 1 tsp garlic powder
- 1/2 tsp onion powder
Additional Ingredients:
- 6 slices crispy cooked bacon (coarsely chopped)
- 1/4 cup chopped fresh chives (reserve 1 tbsp for topping)
- Kosher salt and black pepper to taste
- Steam the Cauliflower: Steam the cauliflower florets until fork-tender, about 10 minutes. Drain well in a colander.
- Preheat the Oven: Preheat the oven to 425°F. Grease a 9×13-inch baking dish.
- Prepare Cheese Mixture: In a large mixing bowl, combine the softened cream cheese, sour cream, sharp cheddar cheese, Monterey Jack cheese, garlic powder, and onion powder. Mix until smooth and creamy.
