Ingredients

Scale

Shrimp and Seasoning

  • 1 1/4 lb large shrimp or prawns, peeled and deveined (if frozen, thawed)
  • 1 tbsp all-purpose flour
  • 1 to 2 tsp smoked Spanish paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp ground coriander
  • 1/4 tsp cayenne pepper
  • 1/4 tsp sugar

Cooking Fats

  • 1 tbsp butter (preferably ghee, clarified butter)
  • 3 tbsp extra virgin olive oil

Vegetables and Aromatics

  • 3 shallots, thinly sliced
  • 4 garlic cloves, chopped
  • 1/2 green bell pepper, cored and sliced
  • 1/2 yellow bell pepper, cored and sliced

Liquids and Garnish

  • 1 cup canned diced tomato
  • 1/3 cup chicken or vegetable broth
  • 2 tbsp dry white wine
  • 2 tbsp fresh lemon juice
  • 1/3 cup chopped parsley leaves

Instructions

  1. Prepare the shrimp: Pat the shrimp dry with paper towels and place them in a large bowl. Add the flour, smoked paprika, salt, pepper, ground coriander, cayenne pepper, and sugar. Toss everything together until the shrimp are evenly coated with the seasoning mixture.
  2. Sauté aromatics and peppers: Heat a large cast iron skillet over medium heat and melt the butter together with the olive oil. Add the thinly sliced shallots and chopped garlic, cooking for 2-3 minutes while stirring regularly to release their fragrance without burning the garlic. Add the sliced green and yellow bell peppers, cooking for an additional 4 minutes while tossing occasionally to soften the peppers evenly.
  3. Cook the shrimp and make the sauce: Add the seasoned shrimp to the skillet and cook for 1 to 2 minutes until they just begin to turn opaque. Then pour in the canned diced tomatoes, chicken or vegetable broth, dry white wine, and fresh lemon juice. Continue cooking for a couple more minutes, stirring gently, until the shrimp turn bright orange and the sauce is slightly reduced.
  4. Finish and serve: Stir in the chopped fresh parsley to add a burst of color and freshness. Remove from heat and serve immediately while hot for the best flavor and texture.

Notes

  • Ensure shrimp are thoroughly thawed if using frozen for even cooking.
  • Use ghee or clarified butter to add a rich buttery flavor without burning easily.
  • Adjust the amount of smoked paprika and cayenne pepper to taste depending on your heat preference.
  • This dish pairs well with crusty bread, rice, or a light salad for a complete Mediterranean meal.
  • For a kosher or halal version, ensure the broth and wine are compliant or substitute accordingly.
