These Mediterranean Steak and Rice Bowls are a flavorful and satisfying meal option. Marinated flank steak is grilled to perfection and served over fluffy white rice with a variety of fresh toppings and a creamy Greek yogurt dressing.

For the Steak:

  • 11.5 pounds flank steak
  • 1/4 cup red wine vinegar
  • 1/4 cup olive oil
  • 1 teaspoon dried oregano
  • 1 tablespoon Dijon mustard
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • juice of 1 lemon
  • 4 cloves fresh garlic, crushed

For the Greek Yogurt Dressing:

  • 4 cups chopped romaine lettuce
  • 2 cups white rice
  • 1 cup sliced cucumber
  • 1 cup diced tomato
  • 1 cup olives
  • 1/4 cup hummus
  • 1/4 cup feta cheese
  • fresh chopped dill and mint

Instructions

  1. Marinate Steak: Add all of the marinade ingredients to a mixing bowl and whisk together. Marinate the steak in the fridge for at least 2 hours or overnight.
  2. Make the Greek Yogurt Dressing: Blend all dressing ingredients until smooth. Refrigerate until ready to use.
  3. Cook the Steak: Allow the steak to come to room temperature. Cook in a hot skillet for 4-5 minutes per side until medium-rare.
  4. Assemble the Bowls: Layer romaine, rice, steak, toppings, and yogurt dressing.
