For the Marinated Steak:

  • 1 pound flank steak or sirloin steak
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1 clove garlic, minced or grated
  • 1 teaspoon Dijon mustard
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper

For the Couscous:

  • 1 1/4 cup water or broth
  • 1/2 teaspoon salt
  • 2 teaspoons olive oil
  • 1 cup dry couscous

For Assembly:

  • 1 cup hummus
  • 1 head romaine lettuce, roughly chopped
  • 1 tomato, sliced
  • 1/2 English cucumber, halved and sliced
  • 1/2 red onion, thinly sliced
  • 1/2 cup kalamata olives (optional)
  • 2 tablespoons olive oil
  • 1 lemon, juiced
  • 1/4 cup feta cheese, crumbled
  • Fresh parsley, roughly chopped, to serve

Instructions

  1. Marinate the Steak: In a bowl, combine olive oil, balsamic vinegar, garlic, Dijon mustard, salt, and pepper. Add the steak, coat in the marinade, and marinate for at least 20 minutes.
  2. Prepare the Couscous: Boil water with salt, add couscous and olive oil, let it stand for 5 minutes, then fluff with a fork.
  3. Cook the Steak: Grill the steak for 4-9 minutes per side according to desired doneness. Let it rest and slice into strips.
  4. Prepare the Vegetables: Chop lettuce, tomatoes, cucumber, red onion, and olives. Toss with olive oil, lemon juice, salt, and pepper.
  5. Assemble the Bowls: Layer hummus, couscous, vegetables, steak slices, feta, and parsley in bowls.
  6. Storage: Store leftovers in airtight containers in the fridge for up to 4 days.
