Ingredients

Scale

For the Crust

  • 5 tablespoons all-purpose flour
  • 1 teaspoon granulated sugar
  • ⅛ teaspoon kosher salt
  • 2 tablespoons salted butter, cold
  • 2 teaspoons ice water

For the Filling

  • 1 medium apple
  • ½ teaspoon honey
  • 1 ½ teaspoons granulated sugar
  • ⅛ teaspoon ground cinnamon
  • Pinch ground nutmeg
  • ½ tablespoon salted butter, cold and cut into small pieces

For Finishing

  • 1 small egg, beaten
  • ¼ teaspoon granulated sugar

Instructions

  1. Make The Crust: In a small bowl, combine 5 tablespoons of all-purpose flour, 1 teaspoon granulated sugar, and ⅛ teaspoon kosher salt. Cut in 2 tablespoons of cold salted butter using a fork until the mixture resembles wet sand. Add 2 teaspoons of ice water and stir until a dough forms.
  2. Chill The Dough: Shape the dough into a disc, wrap it tightly in plastic wrap, and refrigerate for 20 minutes to firm up.
  3. Preheat Oven & Roll Dough: Heat the oven to 400°F (200°C). Place the chilled dough between two sheets of parchment paper and roll it into a 6-inch circle about 1/8 inch thick. Transfer the dough along with the bottom parchment sheet onto a baking sheet and remove the top parchment.
  4. Prepare The Filling: Peel, core, and thinly slice the apple. Arrange the apple slices in the center of the dough, leaving a 1-inch border around the edges. Fold the border over the apples, creating a rustic edge.
  5. Add Flavorings: Drizzle ½ teaspoon of honey over the apples. In a small bowl, mix 1 ½ teaspoons granulated sugar, ⅛ teaspoon ground cinnamon, and a pinch of ground nutmeg; sprinkle this blend evenly over the apples. Dot the filling with small pieces of the remaining ½ tablespoon cold salted butter.
  6. Finish The Galette: Brush the folded dough crust with the beaten egg. Then sprinkle ¼ teaspoon granulated sugar over the crust for a slight crunch and sweetness.
  7. Bake: Bake in the preheated oven for 20 minutes or until the crust is golden brown and the apples are tender and bubbling.

Notes

  • Use a tart apple like Granny Smith or Honeycrisp for a balance of tartness and sweetness.
  • Keep the butter cold to ensure a flaky crust.
  • If you prefer, you can substitute honey with maple syrup or omit it entirely.
  • The dough can be made ahead and refrigerated up to 24 hours before baking.
  • Serve warm with vanilla ice cream or whipped cream for extra indulgence.
