Instructions

  1. Crush Mint Oreos: In a ziploc bag, crush the mint Oreo cookies, keeping them slightly chunky. Set aside for texture in the filling.
  2. Mix Filling Base: In a large mixing bowl, beat the cream cheese with sweetened condensed milk for about 3 minutes until smooth and fluffy. Then beat in the green food coloring and mint extract, ensuring the color and flavor are evenly distributed.
  3. Add Cool Whip and Cookies: Gently fold in 12 ounces of the thawed Cool Whip and the crushed mint Oreos, mixing carefully to maintain the light and airy texture. Pour the mixture evenly into the prepared chocolate Oreo pie crusts.
