  • lbs boneless skinless chicken breasts (diced)
  • 2 Tbsp olive oil
  • 3 cloves minced garlic
  • 1 tsp Italian seasoning (divided)
  • ½ tsp onion powder
  • Salt and pepper (to taste)

For the Rice:

  • 2½ cups chicken broth
  • 1 cup uncooked long-grain white rice
  • ¾ cup heavy cream
  • ⅓ cup grated parmesan cheese

Instructions

  1. Prepare the Chicken: Cut the chicken into bite-sized pieces and season with 1 teaspoon of Italian seasoning.
  2. Cook the Chicken: Heat olive oil in a skillet, brown the chicken, then set aside.
  3. Prepare the Rice: Sauté garlic, add chicken stock and rice, simmer until cooked.
  4. Finish the Dish: Stir in cream, parmesan, cooked chicken, remaining Italian seasoning, and onion powder. Season to taste.
