Meat and Aromatics
- 1 lb Ground Beef
- 1 lb Ground Italian Sausage
- 1 Onion, Chopped
- 4 tsp Garlic, Minced
Liquids and Sauces
- 24 oz Jar of Pasta Sauce
- 8 cups Chicken Broth
- 2 tbsp Tomato Paste
- 14 oz Can Diced Tomatoes
Seasonings and Herbs
- 1 tsp Sugar
- 2 tsp Balsamic Vinegar
- 2 tsp Basil
- 1 tsp Oregano
- 1 Bay Leaf
- Salt and Pepper to Taste
Pasta
- Cook the Meats and Aromatics: In a large pot over medium-high heat, add the ground beef, ground Italian sausage, and chopped onion. Cook until the meats are completely browned and the onion is softened. Drain any excess fat from the pot to keep the soup from becoming greasy.
- Sauté the Garlic: Return the pot to the stove and stir in the minced garlic. Cook for about 30 seconds until fragrant, being careful not to burn the garlic.
- Add Sauces and Broth: Pour in the jar of pasta sauce, diced tomatoes with their juices, tomato paste, and chicken broth. Stir thoroughly to combine all ingredients.
- Season the Soup: Stir in the sugar, balsamic vinegar, dried basil, oregano, bay leaf, and season with salt and pepper to your taste. Mix well.
- Bring to a Boil: Cover the pot and bring the mixture to a boil over medium-high heat.
- Add the Lasagna Noodles: Break the lasagna noodles into pieces and add them directly into the boiling soup. Stir to prevent sticking.
- Simmer the Soup: Reduce the heat to medium-low and let the soup cook uncovered until the noodles have softened, approximately 15 minutes, stirring occasionally to prevent noodles from clumping or sticking to the pot.
- Serve: Remove the bay leaf and ladle the soup into bowls. Top with shredded Parmesan, mozzarella, or spoonfuls of ricotta cheese as desired. Serve hot and enjoy!
Notes
- Breaking the lasagna noodles into smaller pieces helps them cook evenly and makes the soup easier to eat.
- Feel free to substitute the Italian sausage with turkey or skip it entirely for a lighter version.
- Adding fresh basil or parsley as a garnish can brighten up the flavors.
- This soup stores well and can be refrigerated for up to 4 days or frozen for up to 3 months.
- For a vegetarian option, omit the meats and use vegetable broth instead.
