Ingredients

Scale

Main Ingredients

  • 1 tablespoon canola oil
  • 1 cup white mushrooms, thinly sliced
  • ½ medium onion, finely diced
  • 1 teaspoon minced garlic
  • 1 teaspoon salt
  • ½ teaspoon dried thyme
  • ½ teaspoon dried parsley
  • ¼ teaspoon black pepper
  • 1½ cups low sodium chicken broth
  • 2 cups milk or cream (any kind)
  • 340g spaghetti noodles, broken in half (¾ pound)
  • 2 cups cooked turkey or chicken, chopped
  • 1 cup frozen peas
  • ½ cup Parmesan cheese, shredded

Instructions

  1. Sauté Vegetables: In a large pan, heat the canola oil over medium-high heat. Add the mushrooms and diced onion, cooking until the mushrooms brown and the onions soften, about 3-4 minutes. Then add minced garlic, salt, dried thyme, parsley, and black pepper, cooking everything for an additional minute until fragrant.
  2. Add Liquids and Simmer: Pour in the low sodium chicken broth, scraping the bottom of the pan with a wooden spoon to loosen any browned bits for extra flavor. Stir in the milk or cream and bring the mixture to a gentle simmer over medium heat.
  3. Cook the Pasta: Stir in the broken spaghetti noodles, making sure they are submerged. Return to a simmer, then cover the pan. Cook for 10-15 minutes, stirring frequently, until the pasta reaches your preferred tenderness and has absorbed much of the liquid.
  4. Combine and Heat Through: Stir in the chopped cooked turkey, frozen peas, and shredded Parmesan cheese. Cover the pan again and let the mixture sit for a few minutes until everything is heated through and the cheese has melted. Serve warm.

Notes

  • You can substitute cooked chicken for turkey if preferred.
  • Use any kind of milk or cream according to your dietary preferences; half-and-half works well for creaminess.
  • Stir often during pasta cooking to prevent sticking.
  • Adjust salt to taste, especially if using salted broth or cheese.
  • Leftovers keep well in the fridge for up to 3 days and reheat nicely on the stovetop or microwave.
