These delightful Orange Bars are a perfect blend of sweet, tangy orange filling atop a buttery shortbread crust. Easy to make and even easier to enjoy, these bars are a refreshing treat for any occasion.

Shortbread Crust:

  • 1 cup (226g) unsalted butter, melted
  • ½ cup (100g) granulated sugar
  • 2 cups (250g) all-purpose flour
  • ¼ teaspoon salt
  • ½ teaspoon vanilla extract

Orange Filling:

  • 4 large eggs
  • ¾ cup (150g) granulated sugar
  • ¼ cup (30g) cornstarch
  • ⅔ cup (160ml) fresh orange juice
  • 1 tablespoon finely grated orange zest
  • ½ teaspoon almond extract
  • Powdered sugar (optional, for dusting)

Instructions

  1. Prepare the Shortbread Crust – Preheat the oven to 350°F (175°C). Line a 9×13-inch baking dish with parchment paper. Combine melted butter, granulated sugar, vanilla extract, flour, and salt. Press into the dish and bake.
  2. Prepare the Orange Filling – Whisk together eggs, granulated sugar, cornstarch, orange juice, orange zest, and almond extract until smooth.
  3. Bake the Orange Bars – Pour the filling over the baked crust and bake until set.
  4. Slice and Serve – Chill, slice into squares, and dust with powdered sugar if desired.

Notes

  • For a stronger almond flavor, you can increase the amount of almond extract in the filling.
