Ingredients

Scale

Base

  • 1 loaf of French bread, cut into cubes
  • 1 cup fresh blueberries

Custard Mixture

  • 6 large eggs
  • 2 cups milk
  • 1/2 cup heavy cream
  • 1/2 cup granulated sugar
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare the baking dish: Grease a 9×13 inch baking dish with butter or non-stick spray to ensure the French toast doesn’t stick during baking.
  2. Layer the bread and blueberries: Spread the cubed French bread evenly in the baking dish, then sprinkle the fresh blueberries evenly on top of the bread cubes.
  3. Make the custard mixture: In a large bowl, whisk together the eggs, milk, heavy cream, granulated sugar, lemon zest, and vanilla extract until fully combined and smooth.
  4. Soak the bread: Pour the prepared custard mixture evenly over the bread and blueberry layers, making sure all bread pieces are well soaked. Cover the dish tightly with plastic wrap and refrigerate overnight for the flavors to meld and bread to absorb the custard.
  5. Bake the French toast: Preheat your oven to 350°F (175°C). Remove the baking dish from the fridge, uncover, and bake uncovered for about 45 minutes or until the French toast is golden brown and set in the center.
  6. Serve: Let the French toast cool slightly before serving. Enhance the flavor by topping with maple syrup or a dusting of powdered sugar as desired. Enjoy warm!

Notes

  • For extra flavor, add a pinch of cinnamon or nutmeg to the custard mixture.
  • Use day-old or slightly stale French bread for best texture as it soaks up the custard better.
  • If fresh blueberries are unavailable, frozen blueberries can be used; just thaw and drain excess liquid.
  • Make sure to soak the bread overnight for a custardy and tender interior.
  • Store any leftovers covered in the refrigerator and reheat gently before serving.
