Pasta:

  • 1/2 pound dry pasta (about 2 cups of elbow macaroni)

Dill Pickle Salad:

  • 3/4 cup diced dill pickles (12 large pickles)
  • 3/4 cup finely cubed cheddar cheese (34 ounces)
  • 2.5 oz can sliced black olives
  • 1/2 cup mayonnaise
  • 1 Tbsp pickle juice
  • 2 Tbsp milk
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp dry dill
  • pinch of cayenne pepper

Instructions

  1. Cook the Pasta: Cook pasta in salted boiling water until barely al dente. Drain and rinse with cold water until cooled.
  2. Prepare the Dressing: Whisk together mayo, pickle juice, milk, salt, pepper, garlic powder, onion powder, dill, and cayenne. Chill.
  3. Prepare Ingredients: Dice pickles, cube cheese, and drain olives.
  4. Combine: In a large bowl, mix pasta, pickles, cheese, olives, and dressing until well coated.
  5. Adjust and Serve: Taste and adjust seasonings as needed. Serve immediately or chill for up to 24 hours.
