  • 2 tablespoons Rice Vinegar
  • 2 tablespoons Sesame Oil
  • 2 cloves Garlic, minced
  • 1 tablespoon Fresh Ginger, grated
  • 1 teaspoon Ground Black Pepper
  • Optional: ½ teaspoon Red Pepper Flakes, ½ teaspoon Chili Garlic Sauce
  • For the Skewers:

  • 1 Fresh Pineapple, cored and cut into 1-inch chunks
  • Optional Vegetables: Bell Peppers, Red Onion, Zucchini or Yellow Squash, Cherry Tomatoes, Mushrooms

Instructions

  1. Prep the Chicken: Choose between chicken breasts or thighs, cut into cubes, and set aside.
  2. Prepare the Marinade: Combine all marinade ingredients in a bowl and mix well.
  3. Marinate the Chicken: Place chicken in a resealable bag or dish, add marinade, and refrigerate for at least 1 hour.
  4. Assemble the Skewers: Thread marinated chicken, pineapple chunks, and vegetables onto skewers.
  5. Grill the Skewers: Preheat grill to medium-high heat, grill skewers for about 10-15 minutes, turning occasionally.
  6. Serve: Remove from grill and serve hot, garnished with chopped cilantro or sesame seeds if desired.
