Dry Ingredients:

  • 1 1/2 cup white flour
  • 1/2 cup protein powder (60g)
  • 1 tsp baking soda
  • 3/4 tsp baking powder
  • 3/4 tsp salt
  • 1/2 tsp cinnamon

Wet Ingredients:

  • 1 1/2 cup mashed overripe banana
  • 1/2 cup yogurt (or additional banana)
  • 1/2 cup pure maple syrup, honey, or agave
  • 1/3 cup oil or water
  • 2 tsp pure vanilla extract
  • Optional: chocolate chips, walnuts, coconut, etc.

Instructions

  1. Preheat and Prepare: Grease a 9×5 loaf pan and line the bottom with parchment paper. Preheat the oven to 350°F.
  2. Mix Ingredients: Stir all ingredients together until well combined. Smooth the batter into the prepared pan.
  3. Bake: Bake for 40 minutes. Turn off the oven but keep the bread inside for an additional 5 minutes. If needed, continue baking until a toothpick inserted in the center comes out mostly clean.
  4. Cool and Serve: Let the bread cool in the pan. Run a knife around the edges, invert onto a plate, and allow it to cool completely. For best flavor, wait until the next day to enjoy!

Notes

  • If the bread is too soft in the center, cover with foil and continue baking until done.
