Shrimp:
- 1 pound extra large shrimp (peeled and deveined)
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 2 teaspoons Old Bay Seasoning (divided)
Sauce:
- 1 tablespoon olive oil
- 4 cloves garlic (minced)
- 1 1/2 cups white wine
- 1/4 cup lemon juice (freshly squeezed – about 1 lemon)
- 1/2 cup unsalted butter (room temperature)
- 2 tablespoons chopped flat leaf parsley
- Freshly grated Parmesan cheese
- Season the Shrimp: Season both sides of the shrimp with salt, pepper, and 1 teaspoon Old Bay Seasoning.
- Cook Shrimp: Heat olive oil in a large skillet over medium-high heat. Cook shrimp for 2-3 minutes on each side. Remove shrimp from skillet and set aside.
- Cook Garlic: Add minced garlic to the skillet and cook for 1 minute.
- Deglaze the Pan: Pour in white wine and lemon juice, scraping up any browned bits. Bring to a boil, then simmer for 5 minutes.
- Finish the Sauce: Stir in butter and remaining Old Bay Seasoning until butter melts.
- Combine: Return shrimp to the skillet, stir to coat in sauce. Season with salt and pepper.
- Serve: Garnish with parsley and Parmesan. Serve hot.
