For the Crust:

  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 1/2 cup brown sugar
  • 1 cup butter, melted

For the Rhubarb Filling:

  • 2 cups chopped rhubarb
  • 1 cup granulated sugar
  • 2 tbsp cornstarch
  • 1 tsp vanilla extract

For the Cream Cheese Topping:

  • 8 oz cream cheese
  • 1 cup powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F and prepare a 9×13 baking dish. Mix flour, oats, brown sugar, and melted butter. Press into the dish and bake for 15 minutes.
  2. Cook rhubarb, sugar, and cornstarch in a saucepan until thick. Stir in vanilla.
  3. Spread rhubarb mixture over crust and bake for another 10–15 minutes.
  4. Beat cream cheese, powdered sugar, and vanilla until smooth. Spread cream cheese topping over cooled bars and chill for at least 2 hours.
  5. Cut into squares and serve.
