Base
- 3 tablespoons unsalted butter
- 16 ounces marshmallows (about 64 regular or 8 cups miniature)
- 1 teaspoon vanilla extract
- 6 cups Rice Krispie cereal
- Green gel food coloring, enough to reach desired tree color
Decoration
- 12 mini pretzel sticks
- Christmas sprinkles, as desired
- 4 ounces white candy melts or white chocolate chips
- Prepare pan: Line a 9×13 inch baking dish with parchment paper and set aside. If you don’t have parchment paper, lightly grease the pan with butter or non-stick spray to prevent sticking.
- Melt marshmallows and butter: In a large saucepan over medium-low heat, melt the butter and marshmallows together, stirring constantly with a silicone spatula to prevent burning. Once smooth, stir in the vanilla extract.
- Add color and cereal: Turn off the heat. Quickly stir in the green gel food coloring until the mixture reaches your desired tree shade. Immediately add the Rice Krispie cereal and fold gently but thoroughly to coat all the cereal.
- Transfer and press: Pour the mixture into the prepared baking dish. Lay another piece of parchment paper on top and gently but firmly press the mixture evenly into the pan. Let cool completely—about one hour—until set.
- Cut tree shapes: Lift the cooled rice krispie slab from the pan using the parchment paper. On a cutting board, cut the slab lengthwise in half. Then cut each half into 6 triangles to form tree shapes (12 trees total). Carefully insert one mini pretzel stick into the base of each triangle as the tree trunk.
- Melt and drizzle chocolate: Place white candy melts or chocolate chips in a heatproof bowl. Melt according to package instructions at half power until smooth. Pour the melted chocolate into a zip-top freezer bag and snip a small corner. Drizzle the chocolate over the trees decoratively and immediately sprinkle with Christmas sprinkles.
- Set and serve: Allow the chocolate to fully cool and harden before serving. Enjoy your festive Rice Krispie Christmas Trees!
Notes
- If parchment paper is not available, grease the pan well to prevent sticking.
- You can adjust the green gel food coloring amount to get lighter or darker trees.
- White chocolate can be substituted with white candy melts for easier melting and coating.
- Store leftover trees in an airtight container at room temperature for up to 3 days to maintain freshness.
