  • 14 oz. (396 g) sweetened condensed milk

  • ¼ teaspoon salt

Instructions

  1. Boil the Rice: Add the water and rice to a large saucepan or heavy-bottomed pot. Bring to a boil over medium-high heat. Once boiling, cover the pot and reduce the heat to low. Let the rice simmer gently for about 10 minutes until partially cooked and water has mostly absorbed.
  2. Mix in Milks and Spices: Remove the lid and stir in the whole milk, sweetened condensed milk, ground cinnamon, nutmeg, and salt. If using raisins, add them now. Stir thoroughly to combine all ingredients evenly.
  3. Cook Until Thickened: Increase the heat to medium and continue cooking the mixture for 15 to 20 minutes, stirring frequently to prevent sticking. Cook until the pudding is thick, creamy, and the rice is tender.
  4. Add Vanilla and Serve: Remove the pot from heat and stir in the vanilla extract if using. Scoop the pudding into serving dishes or bowls. Optionally, dust the top with extra cinnamon or garnish with chopped nuts or fresh fruit before serving warm or chilled.
