For the Taco Meat
- 2 Tbsp olive oil
- 1 cup chopped white onion
- 1 lb ground beef
- 1 Taco Seasoning Packet (for 1 lb of meat; Siete Mild recommended)
For the Cheese Sauce
- 1 (10 oz) can Rotel Diced Tomatoes with Lime Juice and Cilantro (or Diced Tomatoes and Green Chilies)
- 8 oz Velveeta cheese, cubed
For Assembly
- 10 Nacho Cheese Flavored Hard Taco Shells
- 3 cups shredded lettuce
- Sauté Onion: In a medium pan, heat the olive oil over medium heat until warm. Add the chopped white onion and sauté for 2-3 minutes until the onion softens and becomes translucent.
- Cook Ground Beef: Add the ground beef to the pan with the onions. Cook thoroughly, breaking the meat apart as it cooks. Once browned, add the taco seasoning packet as per the packet instructions, stirring to combine and allow the flavors to meld. When fully cooked and seasoned, set the meat aside.
- Make Cheese Sauce: In a small pot over low heat, combine the can of Rotel diced tomatoes (with lime juice and cilantro) and cubed Velveeta cheese. Stir frequently until the cheese completely melts and forms a smooth, creamy cheese sauce.
- Warm Taco Shells: While the cheese is melting, warm the hard taco shells according to the package instructions—typically in the oven for a few minutes until crispy and heated through.
- Assemble Tacos: Begin assembly by placing shredded lettuce into each taco shell, then add a generous scoop of the seasoned taco meat, and finally top with the warm Velveeta cheese sauce. Serve immediately and enjoy your flavorful Rotel tacos!
Notes
- You can substitute the hard taco shells for soft tortillas if preferred.
- Use mild, medium, or hot taco seasoning depending on your spice preference.
- If Velveeta is not available, try using a blend of cheddar and cream cheese for a similar creamy texture.
- For extra freshness, add diced avocado or pico de gallo as toppings.
- These tacos can be doubled easily for larger gatherings.
