Instructions

  1. Caramelize Onion: Heat ghee or butter in a large stockpot over medium heat. Add the finely chopped onion and cook until golden and caramelized, about 20 minutes, stirring occasionally to prevent burning. Then add the jalapeño and minced garlic, cooking for an additional minute to release their flavors.
  2. Cook Chicken with Spices: Stir in the ground chicken along with garam masala, turmeric, and 1 1/2 teaspoons of salt. Cook over medium heat, breaking up the meat with a spoon, until the chicken is no longer pink and spice aroma is fragrant.
  3. Simmer Potatoes: Add the diced potatoes and water to the pot. Cover and cook, stirring occasionally, until the potatoes become tender, about 25 minutes. This slow simmer allows the flavors to meld and potatoes to soften.
  4. Add Peas and Cilantro: Stir in green peas and minced cilantro. Taste the mixture and adjust seasoning, adding more salt if needed to balance the flavors.
  5. Assemble in Baking Dish: Transfer the filling into a 2-quart (2 L) baking dish, spreading it evenly. Roll out the puff pastry and carefully place it over the filling, trimming any excess. Cut a few steam vents on top to allow moisture to escape during baking.
  6. Bake the Pie: Bake the assembled pie in a preheated oven at 400°F (200°C) for about 25 minutes, or until the pastry crust is golden brown and crisp. Remove from oven and let it cool slightly before serving.
