Instructions

  1. Prepare the Toast: Toast the slices of bread to your desired level of crispness and set them aside to keep warm.
  2. Make the Shakshouka Sauce: Heat olive oil in a large skillet over medium heat. Add the chopped onion and bell pepper, sautéing for about 5 minutes until softened. Add minced garlic, ground cumin, smoked paprika, and optional cayenne pepper, stirring and cooking for another minute until fragrant. Pour in the diced tomatoes with their juice, season with salt and pepper to taste, and let the sauce simmer gently for 8-10 minutes to blend the flavors.
  3. Poach the Eggs: Using the back of a spoon, create two small wells in the tomato sauce. Crack one egg into each well. Cover the skillet and cook for 5-7 minutes until the egg whites are fully set but the yolks remain runny. Adjust timing if you prefer firmer yolks.
  4. Assemble and Serve: Place the toasted bread on plates and generously spoon the shakshouka sauce and poached eggs on top. Garnish with freshly chopped parsley or cilantro and sprinkle with crumbled feta cheese if desired. Serve immediately while warm for the best flavor and texture.
