  • 2 lbs. large shrimp (peeled, deveined, tail-off)

For the Sauce:

  • 20 oz. refrigerated three cheese tortellini (such as Buitoni)
  • 1 tbsp. olive or grapeseed oil
  • 1/3 cup dry white wine
  • 8 tbsp. unsalted butter
  • 2 tbsp. minced garlic
  • 1 tbsp. all-purpose flour
  • 6 oz. seafood or chicken stock
  • 4 oz. cream cheese (softened)
  • 2 cups heavy cream
  • 1 tsp dried basil
  • 5 oz. fresh baby spinach
  • 1/4 tsp crushed red pepper
  • 1/2 cup freshly grated Parmesan

Instructions

  1. Season the Shrimp: Season the shrimp with the all-purpose seasoning.
  2. Sear the Shrimp: In a large skillet, heat oil over medium-high heat. Sear the shrimp in batches for 1-2 minutes per side. Set aside.
  3. Prepare the Sauce: Deglaze the skillet with wine. Add butter, garlic, and flour. Stir until dissolved. Add stock, cream cheese, heavy cream, and basil. Simmer for 5-7 minutes.
  4. Cook the Tortellini: Cook the tortellini according to package instructions. Drain and set aside.
  5. Finish the Sauce: Add spinach to the sauce. Stir in red pepper flakes and Parmesan until melted. Adjust seasoning. Add tortellini and shrimp. Stir to combine.
  6. Serve: Serve the Shrimp Tortellini with Garlic Sauce warm.
