Pasta:
Bruschetta:
- 6 Roma Tomatoes (Chopped)
- Large Handful of Fresh Basil Leaves (Roughly Torn)
- 2 Tablespoons Olive Oil
- Salt & Pepper (To Taste)
- ½ Tablespoon Garlic (Minced)
Chicken:
- 2 Chicken Breasts (Diced)
- ½ Cup Tomato Sauce
- ½ Cup Balsamic Vinegar
- 2 Tablespoons White Sugar
- ¼ Cup Parmesan Cheese (Grated)
- Cook pasta according to package directions. Boil water, add salt, and cook pasta until al dente. Drain and set aside.
- In a medium bowl, prepare bruschetta mixture. Combine tomatoes, basil, olive oil, garlic, salt, and pepper. Set aside.
- Cook chicken in a skillet. Heat olive oil, cook diced chicken until browned and cooked through. Remove chicken from skillet.
- Sauté tomato mixture in the same skillet. Add tomato mixture and cook briefly.
- Add cooked pasta and chicken to the skillet. Combine all ingredients in the skillet.
- Prepare balsamic glaze. Simmer balsamic vinegar and sugar until thickened.
- Drizzle balsamic glaze over the pasta. Serve topped with Parmesan cheese and fresh basil.
Notes
- You can add a splash of red wine to the balsamic glaze for extra depth of flavor.
- Feel free to customize by adding other vegetables like bell peppers or onions.
