  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes with green chilies
  • 1 cup frozen corn
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Potato Layer:

  • 4 cups sliced potatoes (about 1.5 pounds)
  • 1 cup shredded cheese (cheddar or your preference)

Instructions

  1. Cook the Ground Beef Mixture: In a skillet over medium heat, cook the ground beef with chopped onion and minced garlic until browned. Drain any excess fat.
  2. Prepare the Sauce and Veggies: Transfer the beef mixture to the slow cooker. Add cream of mushroom soup, milk, kidney beans, diced tomatoes, corn, chili powder, salt, and pepper. Mix well.
  3. Add the Potato Layer: Layer sliced potatoes over the beef mixture.
