Cookies:

  • 1/2 cup Butter (softened, salted or unsalted)
  • 1/3 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 &1/2 cup AP flour
  • 1/2 cup graham crackers (finely crushed, about 3.5 sheets, for the cookie dough)
  • 1/4 tsp salt
  • 3/4 tsp baking soda

Toppings:

  • 5 standard Hershey bars
  • 1 & 1/2 cup Marshmallow fluff

Instructions

  1. Preheat: Preheat the oven to 350F then line an 8×8 inch baking pan with parchment paper and set it aside.
  2. Cream Butter and Sugars: Cream the butter, granulated sugar, and brown sugar until combined. Add in the egg and the vanilla extract and mix again.
  3. Mix Dry Ingredients: Add in the flour, graham cracker crumbs, salt, baking soda, and mix just until the flour mixture disappears.
  4. Prepare Layers: Press half of the dough evenly onto the prepared baking sheet. Chill in the fridge while you re-line the pan and repeat with the remaining dough.
  5. Assemble: Place chocolate bars over the dough, then spread marshmallow fluff on top. Add the second cookie dough layer on top.
  6. Bake: Bake in the preheated oven for 25 minutes. Let cool completely before slicing.

Notes

  • For easier slicing, chill the bars in the fridge before cutting.
  • Store leftovers in an airtight container for up to three days.
