Ingredients

Scale

Beef and Seasoning

  • 3 pounds bottom round roast, cut into ½-inch cubes
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper
  • ¼ cup extra virgin olive oil

Vegetables and Aromatics

  • 3 large yellow onions, diced
  • 2 medium jalapeno peppers, seeded and finely diced
  • 1 tablespoon garlic, minced

Spices and Liquids

  • 3 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 can (28 ounces) diced tomatoes, undrained
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 can (4.5 ounces) chopped green chiles
  • 2 cups beef broth, or as needed

Instructions

  1. Season Beef: Evenly season the beef cubes with kosher salt and black pepper to enhance the flavor and prepare the meat for searing.
  2. Heat Oil and Sear Beef: Heat the extra virgin olive oil in a large skillet over high heat. Working in batches to avoid overcrowding, add the beef cubes and cook for 2-3 minutes on each side until they are nicely browned, which seals in juices and adds depth to the chili’s flavor.
  3. Reduce Heat: After searing the beef, reduce the skillet heat to medium-high to prepare for cooking the aromatics.
  4. Cook Onions and Jalapenos: Add the diced onions and finely diced jalapenos to the same skillet. Cook, stirring occasionally, for about 5 minutes until they are softened but not browned, which releases their natural sweetness and spicy aroma.
  5. Add Garlic: Stir in the minced garlic and cook for an additional minute to infuse the dish with rich garlic flavor without burning.
  6. Add Spices and Liquids: Stir in the chili powder and ground cumin to coat the vegetables and beef. Then add the diced tomatoes (with juices), black beans, kidney beans, chopped green chiles, and beef broth. Mix everything thoroughly to combine all ingredients evenly.
  7. Simmer Chili: Reduce the heat to low and let the chili simmer gently for 30 minutes to an hour, stirring occasionally. This slow cooking tenderizes the beef and allows all the flavors to meld together beautifully, resulting in a rich and spicy chili.

Notes

  • For extra heat, leave some jalapeno seeds in or add cayenne pepper.
  • You can substitute bottom round roast with chuck roast for a more tender result.
  • Adjust beef broth quantity based on the desired chili thickness.
  • This chili freezes well for up to 3 months.
  • Serve with toppings like shredded cheese, sour cream, or chopped cilantro for added flavor.
