  • 2 bags (10 oz each) Ghirardelli vanilla melting wafers
  • ½ cup Wilton pink candy melts
  • ½ cup Wilton bright pink candy melts
  • Sprinkles (optional)

Instructions

  1. Heat Treat Cake Mix: Preheat the oven to 350°F and line a baking sheet with parchment paper. Spread the cake mix evenly on the sheet and bake for 5 minutes to heat treat, eliminating any bacteria. Remove and cool completely on a wire rack.
  2. Prepare Cake Dough: Place softened cream cheese in a medium mixing bowl and beat with a hand mixer on medium-high until smooth and creamy. Add cooled cake mix and fold together with a spatula, then mix fully with the hand mixer until a dough consistency is achieved.
  3. Add Cream Cheese Chips: Fold in the chopped cream cheese chips evenly into the dough.
  4. Chill Dough: Cover the cake dough with plastic wrap and refrigerate for 2 hours until firm.
  5. Form Truffle Balls: Line two baking sheets with parchment paper. Using a 1½ tablespoon cookie scoop, scoop dough onto sheets and roll into smooth balls by hand. Let rest for about 15 minutes to reduce cracking during coating.
  6. Melt Vanilla Coating: Melt the vanilla melting wafers using a double boiler over low heat or microwave in 30-second increments, stirring between, until smooth and fully melted.
  7. Coat Truffles: Using a fork, dip each dough ball into melted vanilla coating, tap off excess, and place on parchment-lined baking sheet about 2 inches apart. Sprinkle sprinkles atop half of the coated truffles before coating sets.
  8. Prepare Pink Candy Melts: Place pink and bright pink candy melts in separate microwave-safe piping bags and melt on low heat until smooth.
  9. Drizzle Decoration: Snip a small tip off each piping bag and drizzle the melted pink candy melts over the remaining undecorated coated truffles.
