These Strawberry Cheesecake Nachos are a delightful twist on a classic dessert, combining the creamy richness of cheesecake with the fresh sweetness of strawberries, all layered on crispy cinnamon-sugar tortilla chips.

Ingredients

Scale

Strawberry Sauce:

  • 1 1/2 cups fresh sliced strawberries
  • 5 tablespoons granulated sugar
  • 4 1/2 tablespoons water (divided)
  • 1/2 tablespoon cornstarch

Cheesecake:

  • 8 ounces cream cheese (room temperature)
  • 1/3 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup full-fat sour cream
  • 1/2 cup heavy cream

Tortilla Chips:

  • 5 9- inch white flour tortillas
  • 6 tablespoons butter (melted)
  • 4 1/2 tablespoons granulated sugar
  • 1 1/2 cups graham cracker crumbs
  • 1 1/2 teaspoons ground cinnamon

Instructions

  1. Strawberry Sauce – In a saucepan, simmer strawberries with sugar and water. Make a cornstarch slurry, thicken sauce, then cool.
  2. Cheesecake – Beat cream cheese until smooth, mix in sugar, vanilla, sour cream, and heavy cream until fluffy.
  3. Tortilla Chips – Coat tortillas in butter and cinnamon-sugar mixture, bake until crispy.
  4. Assemble the Nachos – Lay out tortilla chips, drizzle with cheesecake, top with strawberry sauce, and serve immediately.

Notes

  • You can customize these nachos with additional toppings like chocolate sauce or chopped nuts.
  • For a shortcut, you can use store-bought cinnamon-sugar pita chips instead of making your own tortilla chips.
