For pie:
- 2 – 9” store-bought or homemade pie crusts
- 1/3 cup water
- 2 lbs. fresh strawberries, hulled
- 3/4 cup granulated sugar
- 2/3 cup cornstarch
- 1/2 lemon juiced and zested
- 1 teaspoon vanilla extract
- A pinch of salt
For glaze:
- 1 cup powdered sugar
- 2 tablespoons half and half
- Rainbow nonpareil sprinkles
- Preheat the oven: Preheat the oven to 375° F and grease a 9” pie plate.
- Mix the filling: Combine water, strawberries, sugar, lemon juice, zest, salt, and vanilla in a pot over medium-low heat until strawberries soften, about 4 – 5 minutes. Add cornstarch and cook until mixture thickens, about 1 – 2 minutes. Remove from heat.
- Prepare the pie: Line the pie plate with a bottom crust, pour in the warm strawberry filling, top with another crust, crimp the edges, and vent the top crust.
- Bake: Bake for 35 – 45 minutes until golden brown.
- Make the glaze: Whisk powdered sugar and half and half into a drizzle-able paste. Drizzle over the cooled pie, sprinkle with nonpareils, and let set.
- Serve: Slice and serve!
