For pie:

  • 29” store-bought or homemade pie crusts
  • 1/3 cup water
  • 2 lbs. fresh strawberries, hulled
  • 3/4 cup granulated sugar
  • 2/3 cup cornstarch
  • 1/2 lemon juiced and zested
  • 1 teaspoon vanilla extract
  • A pinch of salt

For glaze:

  • 1 cup powdered sugar
  • 2 tablespoons half and half
  • Rainbow nonpareil sprinkles

Instructions

  1. Preheat the oven: Preheat the oven to 375° F and grease a 9” pie plate.
  2. Mix the filling: Combine water, strawberries, sugar, lemon juice, zest, salt, and vanilla in a pot over medium-low heat until strawberries soften, about 4 – 5 minutes. Add cornstarch and cook until mixture thickens, about 1 – 2 minutes. Remove from heat.
  3. Prepare the pie: Line the pie plate with a bottom crust, pour in the warm strawberry filling, top with another crust, crimp the edges, and vent the top crust.
  4. Bake: Bake for 35 – 45 minutes until golden brown.
  5. Make the glaze: Whisk powdered sugar and half and half into a drizzle-able paste. Drizzle over the cooled pie, sprinkle with nonpareils, and let set.
  6. Serve: Slice and serve!
