Cake:

  • 2 1/2 cups cake flour, sifted
  • 2 1/4 teaspoons baking powder
  • 1 teaspoon fine sea salt
  • 1/2 cup unsalted butter, room temperature
  • 1 2/3 cups granulated sugar
  • 3 large eggs, room temperature
  • 1/4 cup vegetable oil
  • 1 Tablespoon vanilla extract
  • 2 teaspoons vanilla bean paste
  • 1 cup whole milk, room temperature

Strawberry Filling:

  • 2 pounds fresh strawberries, divided
  • 2 Tablespoons granulated sugar

Cream Cheese Frosting:

  • 10 ounces full-fat cream cheese, cold
  • 1 1/4 cup confectioners’ sugar
  • 1 1/4 teaspoon vanilla extract
  • 1/8 teaspoon fine sea salt
  • 2 1/2 cups heavy whipping cream, cold

Instructions

  1. Preheat oven to 350º F. Spray three 8-inch round cake pans with cooking spray and line the bottoms with parchment paper.
  2. Make the cake batter. In a medium bowl, whisk together flour, baking powder, and salt. Cream butter and sugar until smooth. Add eggs, oil, and vanillas. Alternate adding dry ingredients and milk. Bake for 21-23 minutes.
  3. Make the strawberry filling. Slice half of the strawberries and mix with sugar to macerate.
  4. Make the frosting. Beat cream cheese, then add sugar, vanilla, and salt. Stream in heavy cream until smooth.
  5. Assemble the cake. Layer cake, frosting, macerated strawberries, repeat, and top with final cake layer. Frost top and sides, decorate with strawberries.

Notes

  • You can add a touch of lemon zest to the strawberry filling for a citrusy twist.
  • For a more intense vanilla flavor, scrape the seeds from a fresh vanilla bean pod instead of using vanilla bean paste.
