This Street Corn Pasta Salad recipe is a delightful twist on classic street corn, combining roasted corn, pasta, and a creamy, flavorful dressing. Perfect for picnics, potlucks, or a tasty side dish.

Pasta:

  • about 400g of pasta

Roasted Corn:

  • 2 roasted corn cobs

Vegetables:

  • 3 green onions
  • 1 shallot
  • 2 jalapenos
  • 1/2 cup cilantro

Additional:

  • 1 cup cotija cheese
  • 1 cup sour cream
  • 1/2 cup mayo
  • 3 cloves garlic
  • juice and zest of 1 lime
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • 1 tsp salt & pepper

Instructions

  1. Roast the Corn: Husk the corn and roast in a pan with olive oil for 10-15 minutes. Remove kernels from the cob.
  2. Cook Pasta: Boil salted water, cook pasta until al dente, strain, and set aside.
  3. Prepare Ingredients: Slice green onion, mince shallot, garlic, jalapeno, cilantro, crumble/grate cotija cheese, and zest/juice lime.
  4. Make Dressing: Combine sour cream, mayo, garlic, lime zest/juice, smoked paprika, chili powder, salt, and pepper.
  5. Assemble Salad: Mix pasta with corn, green onions, shallot, jalapeno, cilantro, and cotija cheese. Pour dressing over and toss. Top with more cotija and herbs.
