Salmon:

  • 4x 6-ounce pieces of salmon
  • 2 Tbsp olive oil

Stuffing:

  • 3 cups baby spinach, packed
  • 1 tsp Italian seasoning
  • 1/2 tsp paprika
  • A pinch of cayenne pepper
  • 5.3 ounce block of feta cheese
  • 1/4 cup parmesan, freshly grated
  • 1/4 cup jarred roasted red peppers, chopped
  • Salt + pepper, to taste

Instructions

  1. Preheat the oven: Preheat oven to 400F. Line a baking sheet with parchment paper. Place salmon pieces onto lined baking sheet, skin-side down.
  2. Prepare the salmon: Slice down the middle of each piece of salmon, lengthwise without cutting through. Brush with 1 Tbsp olive oil, season with salt and pepper.
  3. Sauté the spinach: In a pan, heat olive oil and sauté spinach with seasonings until wilted. Add roasted red peppers, feta, and parmesan; combine well.
  4. Stuff the salmon: Spoon the spinach-feta mixture into the cut salmon pieces.
  5. Bake: Bake stuffed salmon in the oven for 12-17 minutes until cooked to your liking.
  6. Serve: Remove from oven and serve hot.
