Ingredients
- 1 ½ cups quick oats
- ½ cup natural peanut butter (use a fresh jar)
- 1 ½ cups pitted dates (soaked in hot water for 10 minutes)
- Preheat Oven: Set the oven to 350°F (175°C) and line a cookie sheet with parchment paper to prevent sticking.
- Prepare Oat Flour: Add the quick oats to a food processor and process until they reach a flour-like consistency.
- Make Dough: Add the natural peanut butter and soaked dates into the food processor with the oat flour and process until the mixture forms a dough that sticks together when pinched.
- Shape Cookies: Roll the dough into tablespoon-sized balls and place them on the parchment-lined cookie sheet. Flatten each ball into a cookie shape as they will not spread during baking.
- Bake: Bake the cookies for 10 to 12 minutes, rotating the cookie sheet halfway through baking. Check the bottoms at 10 minutes; they should be browned. Note that the tops will not change much in color.
- Cool: Let the cookies cool on the cookie sheet for 10 minutes before transferring them to a wire rack to cool completely.
- Store: Store the cooled cookies in a covered container at room temperature for 7 to 10 days.
