Ingredients

Scale

Meat

  • 1 lb ground beef, browned

Vegetables & Beans

  • 1 can black beans, drained and rinsed (15 oz)
  • 1 can corn, drained (15 oz)
  • 1 can diced tomatoes with green chilies (14.5 oz)

Seasoning

  • 1 packet taco seasoning (about 1 oz)

Instructions

  1. Brown the beef: In a skillet over medium heat, brown the ground beef until fully cooked, optionally adding chopped onion and minced garlic for extra flavor. Drain any excess fat.
  2. Combine ingredients: Transfer the browned beef to a crockpot. Add the drained and rinsed black beans, drained corn, diced tomatoes with green chilies, and the packet of taco seasoning. Stir thoroughly to combine all ingredients evenly.
  3. Cook the soup: Cover and cook on low heat in the crockpot for 6 hours, allowing all the flavors to meld together perfectly.
  4. Serve: Ladle the soup into bowls and serve hot. Garnish with tortilla chips, shredded cheese, and sour cream as desired to add extra textures and richness.

Notes

  • For added depth, sauté onions and garlic with the ground beef.
  • Use low-sodium canned goods to reduce salt intake.
  • This recipe can be adapted to a vegetarian version by omitting ground beef and adding extra beans or vegetables.
  • Leftovers store well in the refrigerator for up to 3 days or freeze for up to 3 months.
  • Serve with tortilla chips or over rice for a filling meal.
