Beef Filling

Instructions

  1. Prepare the beef filling: Heat the vegetable oil in a skillet over medium heat. Add the minced garlic and finely chopped shallot, sautéing until fragrant and translucent, about 1-2 minutes.
  2. Cook the ground beef: Add the ground beef to the skillet. Cook until browned thoroughly, breaking the meat apart with a spoon to ensure even cooking.
  3. Season the beef: Stir in soy sauce, oyster sauce, brown sugar, and chili flakes. Allow the mixture to simmer for 2-3 minutes so the flavors meld together.
  4. Add lime and Thai basil: Remove the pan from heat. Stir in fresh lime juice and chopped Thai basil leaves. Let the mixture cool slightly to avoid tearing the rice paper wrappers.
  5. Set up rolling station: Fill a shallow plate with warm water to soften the rice paper wrappers and arrange the cooked beef filling, fresh herbs, and veggies nearby.
  6. Soften the wrappers: Dip one rice paper wrapper into the warm water for 5-10 seconds until pliable. Place it flat on a clean surface.
  7. Add fillings: Near the bottom edge of the softened wrapper, place some beef filling along with optional mint, cilantro, green onions, and julienned carrots or cucumbers.
